Vegetable Quinoa Soup
Ingredients:
2 large carrots, diced
2 stalks celery, sliced
1 onion, diced
1/4 head of cabbage, chopped
2 medium zucchini, cut in half & sliced ⁃
1 can (14 oz.) diced fire roasted tomatoes
2 cans (14 oz.) kidney or white beans, drained and rinsed
1/3 cup dry quinoa
1/2 teaspoon garlic powder
pinch of red pepper flakes
6 cups vegetable broth
Salt and pepper to taste
2 teaspoons herbes de provence or italian seasoning
INSTRUCTIONS:
In a large pot, heat 1 tablespoon oil, sauté onions, carrots and celery for 5 minutes.
Add remaining ingredients, bring to a boil, cover, turn heat to low and simmer for 35 minutes – 1 hour. Adding salt and pepper to taste.
