Ingredients:
2 Broccoli crowns, large
1/3 cup Cranberries or raisins, dried
1/2 tsp Garlic
1 1/2 cups Grapes, red
3/4 cup Red onion
2 tbsp Maple syrup, pure
1 Black pepper, Freshly ground
1/2 heaping tsp Sea salt
Oils & Vinegars
2 tbsp Apple cider vinegar
Nuts & Seeds
1/3 cup Almonds, roasted salted
3/4 cup Cashews, raw
Liquids
1/4 cup Water
For your Mayo-
Place cashews in a bowl. Cover with water and soak for 2 hours or overnight.
If you have a Nutribullet or a Vitamix (what I use) high speed blender, simply soak them in hot (boil) water for 10 minutes.Â
Drain cashews. Add to blender with with rest of the dressing ingredients. Blend until completely smooth and creamy.
Place broccoli, grapes, almonds, red onion, and dried cranberries in a medium or large mixing bowl. Add dressing and toss thoroughly to coat. Season with salt and pepper to taste. Serve chilled.
