Ingredients:
4-6 sweet potatoes (medium sized)
2 avocados - sliced
2 tsps olive oil
3 cups black beans or 2 (15 oz) cans - drained & rinsed
2 cups cherry tomatoes - cut in half
1 cup corn (fresh, thawed or canned)
2/3 cup cilantro chopped, tightly packed
1/2 cup red onion - diced
3-4 cloves of garlic (we love garlic so I had to add more)
1 lime - juiced
Pinch of chili flakes
Salt and pepper to taste
Directions:
1. Preheat oven to 400°F
2. Cut sweet potatoes in half, poke with fork and bake for 40 min or until tender (I used my air roaster for less time)
3. In a bowl, combine black beans, tomato, corn, cilantro, red onion and garlic. Mix in olive oil and lime juice. Sprinkle with sea salt, pepper and chili flakes. Combine. Put mixture on top of baked potato. Top with avocado. Enjoy!
