Ingredients:
12 oz lentil or chickpea pasta, cooked and cooled
1/2 cup Carrot, chopped
3 stalks Celery, chopped
1 cup Peas
1 Red bell pepper, chopped
1 Red onion, small, diced
Olives (optional)
Cherry tomatoes (optional)
Dressing:
2 avocados, mashed
1 small spoonful of vegan mayo
1 Tsp Garlic powder
Salt and pepper to taste
