Gluten Free Pancakes
Ingredients:
120 g gf flour. (I did half oat, half amaranth)
2 tsp maple syrup (I did monk fruit drops)
1/2 tsp salt
1 cup plant based milk
1.5 tsp baking powder
1 tsp vanilla extract
1 tbls melted vegan butter like Miyoko’s
1 flax egg (1 tbls flax, 2 tbls water mix and let sit until it gels)
Directions:
1. Mix the dry ingredients together
2. Mix the wet ingredients together
3. Slowly add the wet to the dry while stirring until to is a smooth batter
4. Pour 1/4 cup of batter onto hot skillet and cook.
Serve with fruit and maple syrup
